Meanwhile, as a fellow iOS & 'droid shunner, I too am finding Sailfish a delightful breath of fresh air, and it has inspired me to pick-up a Sony Experia phone and flash it with Sailfish-X, (which does provide for the installation of .apk's if your really must).
As for app's - - - personally I don't need or want that many, but you could do worse than look at https://openrepos.net/ if you cannot find what you are looking for in the Jolla store, chances are there'll be something there that will serve.
